Well Windows 8 Pro only requires 20gb of space, so they are either partitioning off recovery files, or there's just other software preinstalled that you can remove. Not a big deal. Like you said, cheap 64gb SD and you've got a ~140gb usable tablet/ultrabook.

Pretty sure base evolved stats just correspond to their level before evolving. The gained stats from feeding carry over after evolve and max out at +50 regardless.

Higher stats if you wait to evolve them but in the end it ends up being negligible; 20-30 points.
