The van crash would have crushed their spines. If the van would have landed head first, like in a car accident, then it would have been plausible. They were more worried about setting up the shot for the zombie rain that happened after, so screw physics.
The critics really shit all over this movie and while I don't think it was a 10 star, I did find it enjoyable. If you like end-of-the-world you should check it out, just know its not an action movie. It has more of a "Lost" feel.
Truthfully I think in that world you would start seeing cannibal groups pop up in 4 or 5 months. The wild game would be hunted to near extinction by the survivors, and all the food would be in Iowa.
You also need to think about the beginning of the zpoc, 90% didn't die immediately. During the first weeks the food shipments would stop, just imagine yourself as a truck driver or food processing plant worker watching zombie news and thinking "should I go to work today or protect my family?"...
