The main issue for me is that Zelda was obviously designed with better hardware in mind, or it wouldn't have details you can't see on the switch. I guess even the Zelda dev team expected more hardware wise ..

Is this game worth it as a single-player? Any games it is similar to? Contemplating purchase, figured I'd ask before I end up with another middle-earth.

Exact same case in LoL, didn't stop it from being popular. Not that I personally like LoL, its just not an issue that prevents a game from being great for a specific audience.
