Yeah none of that is unusual, although I don't remember exactly what the bis breakdown would have been but should be fine for level 50-60 stuff. It can really help if you try to find collectible notes with +1 or +2 attempt bonus, which can allow you to get an extra item or two from those nodes...
Yeah even with extra materia slots, each piece only has a max amount you can meld to. I think the GP meld cap is ~868. You'd need food buff to hit 900.
There's no real purpose to go that high, there's a potential set without food that lets you hit every potential bonus even in Diadem with 2742 gather, 2647 perception, and 858 gp. Obviously with food you can push that gp over 900, but haven't seen any real need for that

"expert" doesn't mean any increased level, that's just the name for the roulette of the most recent dungeons. They're just normal dungeon runs. Extremes aren't the "top end" raids, either. Savage and Ultimates are actual "top end". Extremes are just what people farm for mounts.

Irony is there's been plenty of series in the past where officiating has been total shit, either mostly in 1 direction or some for 1 team or the other in individual games...I guess there has just been enough bs this year to make the noise about it a little more widespread.
