The first time you can encounter him is in Mistwood in east Limgrave, when you hear him howl you can get the emote from Kale and then snap him down. Then you can summon him for the gaol fight. You can encounter him again by starting the Ranni quest before going to Radahn

You don't break any quests not getting his help, just miss out on whatever he rewards you with, but it's nothing unique that I remember.

I usually avoid locking on to some of the bigger stuff. They're so big its like aiming at a barn when you swing, where as if you lock on it can jump around on the targeting where you're aiming at the ankle but as you swing it'll lock on to the head or something causing you to miss.

You generally have two damage stats, so either str/fai, str/dex, dex/int, etc. So you spread yourself a little thin doing str/dex/fai. You'll have access to respec soon enough if you can last a little longer.

It's like Onyxia, you have to figure out which way they're going to go before breath attack. There's also at least one dragon that's "indoors" and you can't use the horse with.

Dragons are very doable without the horse, and in some cases easier without the horse. The issue about accessing areas is certainly an issue though.

Blocking against bosses early on is pretty tough. As you said, their combo's will completely drain your stamina until you get a shield with good guard boost and upgrade it with smithing. I would go with dodging/parrying early on until you can get a high level of stamina and a better shield.

If you find a weapon you like and you can apply an ashes of war, you can change it to keen which increases the dex scaling

For fire giant I did phase 1 on foot since it was easier to dodge through his plate attacks where as the horse you had to try to dash away. Then in phase 2 I switched to horse which made it easier to get back behind him after this roll and wack on his ankle. And once you got on his ankle again...
