If you are going to use a shield/tank setup you are generally better getting a spear and one of the super heavy shields and poking from behind the safety of a shield while having enough stamina and poise to soak up everything thrown at you.

Latenna the Albinauric is a good one, she doesn't move but she has an insane range and her arrows track....she has been invaluable for most open world bosses as you can plop her in a corner and have her just dish out constant damage while keeping a boss busy.

Yeah the final boss of this game is trash, the fight is not fun nor does it have any mechanics that make it enjoyable....its a big AOE health sponge with an opening act that drains you of flasks I think it would be more tolerable if I didn't have to refight Radagon each time.
