See I feel the opposite. Getting to phase 3 on Gul'dan feels like an auto win as long as people don't drop fire on the melee/tanks.

All the fights in Nighthold are pretty fun. Even Gul'dan who takes my guild about 10-11 minutes to kill on Heroic is still a good fight. Doesn't feel terrible like Odyn and Helya to wipe on while learning.

Druids are really the only class that has it better than Warriors. Paladins are good at magic damage tanking but lack in the physical department compared to warriors. DKs just suck overall and BrMs need a cooldown for stagger to work on magic damage I think.

You should still be able to complete the quest to get the distilled titan essence and then just leave it in your bank for when you get another. Can also save all your emissary caches/ weekly chest til you get closer to the right mount or complete it.

Just FYI for everyone regarding the Essence of Aman'Thul for Legendary upgrades. The quest eats any extra Essences you have when you turn it in. So if you only need 2 and get 15 from your weekly M+ chest you're going to lose 13 essences. Just something to be aware of.
