I make really good gravy, never from a packet (mildly offended). But turkey still isn't awesome, even with good gravy. It's okay, but man, cook a goose and even without gravy it's good.
I have made turkey that is very moist. (My wife hates that word, I use it as often as possible.) Even when it isn't dry, even when it is smoked, even when it is well prepared I don't like the meat. I'd rather have chicken. Or about anything.
You really don't get how this thread works, do you?

You're right that duck has more of a red meat texture for sure. I've done both farm raised and game duck and goose, and every time there is more fat in the roasting pan from a duck than a goose.
I think what I've found is that the goose responds to the citrus more - it cuts down the fat taste...
