Huh, must be a novely over there in the USA - we have cuttings all over the place here in Australia, mostly sandstone, but still - something very normal here

Nah, the US has a plethora of carved mountains for roads, it's just that the majority of the country lives in areas where it's mostly flat.

That picture from China looks unique/interesting in that they carved right down the middle of those hills and I don't know of any hills in the US that look like almost perfect cones.

Also, many roads only cut into the side of a mountain and wind around a bit, since the Rockies and Appalachian are generally too big to just cut through the middle (plenty of tunnels are used, when needed).

This is Sideling Hill in Maryland (part of the Appalachian range, which are the "small" mountains in the US):
