DS9 has three different docking ports to fit ships of various sizes - external pylons, internal pylons, and the outter ring. It's a lot bigger than it appears, and the landing pads are barely big enough for the shuttlecrafts. It's also no where near as big as one of your standard TNG era space stations that can fit like 8 Galaxy class ships in it.

It's a defensively designed station with a shit ton of weaponry. Extra shield generators would be necessary if the pylons stuck outwards. Damn Cardassian logic.

Yea, but a single vertical element extending upward/downward from the central hub would have 360-degree access and allow multiple ships to dock with it simultaneously without encroaching on one another. The shield emitters are shown as being on the central hub anyway, so the sense that they're somehow shielding/screening the ships is purely visual. Could still have stub pylons to hold torpedo launchers around the periphery.
