Bats and rodents seem like a waste. There's no meat. Like dove, even wrapped in bacon just... Meh.

Well, with quail (the same size as pigions, mostly) most people eat only the breast; makes harvesting almost like shucking an oyster, its just that fast.
Some people only keep the backstrap and legs off rabbits, again not bothering to fiddle with low meat areas.

with other small critters its usually about either quantity, or putting them in a soup/stew to hide the fact you're not getting a fat steak or turkey leg off em.

I hear Nutria is pretty good, and at the size of a small pig, you get a decent harvest from a single animal.
