Except for that fermented stuff from the north and the “cheese head,” everything on this map is delicious.
Frog legs are truly a delicacy. Pressed duck may sound savage, but it’s just about pressing the duck to make a rich broth—nothing too fancy. Tripe is okay, horse steak isn’t my favorite but is still good, and blood-based dishes in general are great—French blood sausage, German Blutwurst, black pudding, etc.
Sardinia’s maggot cheese is a tourist trap; they don’t actually eat it with the maggots.
Raw sea urchin is like a punch of iodine in your face. It’s not really my thing, but if you like seafood, you should try it.
Nestlé, though, is a real culinary horror… so much for my country. but we also do that, and that's awesome
