Birch beer is birch sap+birch bark. Sassafras is used for sassparilla the same way.
cinnamon is bark.
Liquorice is sap+root.
other saps are used, but less commonly. yes maple is particularly sweet. especially North American maples, and thats why maple syrup itself wasn't a thing in Europe.
Rubber is sap.
