I make grilled cheese on the top rack of my grill by spraying canola oil on the bread and having it toasted in the grill with some added smoke from wood chips.

Also, parchment > aluminium foil when you want a quick no-stick surface on a baking sheet.

I shall bake my bread and get only the finest cheese. What's your recommendation for this method? Cheddar is always good, but something a little more substantial could be good, too. Perhaps muenster or even gruy?re.

I'm not a provolone fan. I find it difficult to get good provolone that has a distinct flavour.

Why not just grill it with olive oil instead of butter or mayo. It's delicious.
