I went to Costco today and got a whole brisket. Fucker is huge. I'm almost afraid to cook it; I'm afraid of ruining $60 of meat.
My grill will accommodate the whole brisket, but I don't trust it to hold steady temp for that long. It's 14 lbs, so I was thinking 6-8 hours. I think I'm going to oven cook it for 6 at 250, then put more rub on, and put some heavy smoke on it for a couple more hours. That's the current plan, but I've got nearly two weeks to think on it.How are you going to cook your brisket, man? I've been thinking of getting one for next weekend.
