If you think good bleu cheese is subtle I'm sorry to tell you that you don't know what good bleu cheese is. It doesn't overpower anything provided you use it correctly, and it's delicious to eat on it's own with some baguette.

My favorite meals are when I spent $200, $300+ or more to be surprised to the point I might be laughing at what I thought I was eating is completely different in taste or texture. I can get the same steak at Mastro's that I can get at the Cut that I can get at Del Frisco's, within reason. You're example of it being used correctly is on it's own.
