The Departed, with a few scenes like the Cranberry one above and Wahlberg's theory on FEDs... but yeah, almost all of Scorsese's crime movies have multiple good quote excerpts. The Casino memorable lines are mostly longer monologues though.

The scene that plays out the most in my mind is probably the "Look, why take a chance?" because it can be applicable to mundane day-to-day life, not just why Andy Stone needed to die.
