Island missions now give the weekly quest that can give you 5k gold or currency for the new armor and they changed it so you only have to do 3 mythic ones to finish. Also they changed it so the loot table is now everything on the island, not just the stuff you kill so lots more transmog etc...

There are no more daily emmisaries for azerite armor caches because azerite armor is now deconed into titan residium currency. They cant have us getting to many azerite items a week. So they watered down our chances by having the caches contain all armor slots.

Right now rift is at least still putting out new content. Current wave of raids has 1 10 man and 2 20 man dungeons, the next tier is coming soon as well along with a new zone. They are even adding a new calling to the current warrior / rogue / cleric / mage mix.

The expansion and the level increase are free, the packages are just for people who want to pay extra for the fluff items and a few ease of life things like extra bag slots etc. You can get pretty much all of the extras in game later if you want.

Bow is very popular atm because one of the flavor of the month builds is to do a sorc / bow combo. You have mana for the sorc stuff and then have your stamina pool for the bow attacks. Bow is pretty long range so very easy to use it as an opener in pvp from stealth.
