Could not figure out a good way to keep chilled and serve 5 pony kegs of beer over our 4th of July camping trip. 90+F during the day and usually 65F-70F at night. This was the solution I came up with. Just throw the whole damn kegarator onto a trailer. Pre-chilled it and the beer to...

Yeah, as long as I have a good vacuum seal my stuff never floats. Even using the ziplock-displacement method I can usually get the small amount of trapped air high enough in the bag where the meat stays completely submerged. I haven't done much bone-in stuff yet, not sure if that makes a...

I think you need to enjoy it in context. Compared to what the West Coast IPA (thanks a lot to PTE) has evolved into, yes, it is probably 'underwhelming.' But knowing the history of that beer and understanding is probably is more comparable to an APA, in that context it is highly enjoyable. I...

Well like I said, I primarily do it because it makes clean-up a breeze. Especially on something like a hitachi magic wand where the surface is kind of rough with grooves that can easily build up gross gunk. Plus I don't want to buy 2 hitachi's and the various attachments and then try to keep...

There is a break-even sales number for every labor hour, and that number is probably surprisingly high to a lot of people. I don't know Corndog's specifics, but for my pizza restaurant for every hour of labor I use I need to bring in $71 in sales to cover the cost of that labor hour. So when I'm...

Giants can't catch a break on the injury front. Started the season very short handed and they keep piling on the DL stints. Lincecum looks to be the latest victim after putting together his most solid start since his Cy Young era. Aoki going down hurts a lot too, that guy was one of the best...

My experience has been just the opposite actually. Steaks look more pink/rare than what their cook temp suggested they should be. Obviously thickness of what your cooking and what not will have an affect on the needed time, but the beauty of the sous-vide is that you aren't going to overcook it by going longer than needed. For steaks I generally go for 1 hour out of the fridge, 2 hours out of the freezer. It might all...

Yeah, babies need to learn to self-soothe and part of doing that is letting them cry it out sometimes. 6 months seems like a great starting point for that, by that time they should have established pretty good bonds with the parents and are beyond the point of needing constant comfort and assurance.
