I don't think that's true. Canned tuna is usually made form Albacore or other smaller tuna that wouldn't make steaks or sushi.

I think it's the best way to go. It cooks quickly and stays moist. You don't get the crispy skin you do with deep frying, but deep frying is such a project not to mention that 5 gallons of peanut oil is probably $100 these days.
