You can adjust the difficulty on the fly in the options menu. I don't know if you can do it in mid battle but you can do it between battles I'm pretty certain.

Very good point. You're probably going to have to pay for it out of pocket though. Most policies have a mold exclusion written into them, meaning the carrier isn't going to cover it.
