The soul farm I remember using in DS3 was the stairs in Anor Londo leading up to the old Ornstein/Smough boss room. There's 2-3 silver knights there that I found very easy to backstab to death quickly.

FromSoft DLC is always tuned to be the most challenging/tough stuff. In NG+ it will be extremely difficult, I’d recommend you not experience it for the first time there. Level 150 in your current game is a good place to be.
If you plan to play the DLC, don’t NG+ yet. It basically levels everything up, and you’re likely to get your ass handed to you even more than you would in the DLC on NG.
FromSoft games are challenging and punishing, but I wouldn’t use words like masochistic and self-flagellation. If you’re any good at action games they are not hard games, just somewhat demanding. And they have actual stakes, not just “reload last checkpoint,” which is part of the allure for me...
