Yeah, the Chalice Dungeon system is definitely a trove of unused assets. All of the unused models and bosses from the regular game probably ended up there. Enemy hunters, who seem way tougher than other enemies (maybe they scale with you, IDK) and a few key bosses were saved for the DLC.
