I use an old Dell workstation as a Plex server. I don't know shit about Linux but I tossed Ubuntu on it and got it up and running with a bit of googling. Hardest part was getting it to see my NAS. Might as well start off running Linux and if you don't like it you can get a cheap Windows key.

I prefer headphones with a separate mic. A good set of headphones with a $10 clip on mic allows you to get the exact headphones you want and the mic is just as good as most headsets. Unless you get high impedance headphones or you get extra noise when plugging the headphones in to your onboard...

Pixel 3a is 299 right now, I have the XL which is $60 more. Excellent phone for the price, but the 4a should be coming soon. The Moto G series is also very solid for the price if you want to just go with the current version.
