I feel like coop trivializes encounters and ruins the tightly tuned nature of the game. I beat a boss using coop to try it out and felt like I was robbed of the Dark Souls experience of having to learn a boss via repeated failure and death.

Yep. ME3's combat was on point and incredibly fun. What's interesting is that the MP combat was actually more fun than the singleplayer combat. After playing MP and going back to SP the ideal tactics were much more conservative and patient.
