I couldn't see myself playing past the first month anyway. The game would have to completely surprise me to last longer. So 1 isnt the worst thing. With the cheapest including a month sub, its not the worst investment either. As I usually get at least 50 or so hours of these types of games, with the chance to get much more in some cases.
Again problem is i've heard that server separation can bite you later? as the fomo crowd vanishes and you are stuck on almost empty servers, until they allow transfers or what not. So 2 wouldn't be that bad an investment, and just pay for a month($15) and any other QoL I see(usually bag space for me or weight if the game has it). And in case I end up playing longer, not being stuck on a barren server.
But I do agree, launches are almost always fun, even if it doesnt turn into something long term.
Server separation is indeed a problem but I don't see this playing out how Reddit does. I might be wrong but I feel that the F2P servers will be filled with individuals who won't even buy the sub and will thus quit even quicker, especially when they realize that they can't even use the AH.
For one month of playtime with the option of being surprised and sticking around longer, the lowest value pack and starting with the whales is the way to go in my opinion. To your point, MMO value as it relates to how many hours of fun I get versus how much I spend is always insanely good.
