I developed an allergy to barley in my twenties, loved sampling beer and whiskeys from around the world, now I'm limited to gluten free beer and wine.

I have almost forgotten what real beer tastes like, but I think my beer of choice these days comes pretty close ...Glutenberg ipa (made in Quebec I believe)

That beer is definitely great but god damn was it over hyped for me before I bought it. I think it used to be top 20 or 15 or something on Beer Advocate and when I was going through my IPA phase I was diamond hard when I finally got my hands on it... and was promptly disappointed when it tasted like damn near every other "A" grade IPA I had.


Best beer I ever had in my life was a Surly Four. Nothing has really come close for me.

Went into a random 400sqft liquor store in Nashville today, found six packs of 3 Floyds Zombie Dust and Gumballhead. Never would have thought I'd see it in person!

Five Farms Irish cream, best I’ve had maybe. Usually use it around holidays for milkshakes and hot tubbin but I’ve been sucking this down like crazy in coffee and just by itself this week.

I absolutely love Bulleit whiskey. I know purists will throw a fit but fuck'em.

Get yourself some of the Old Fashioned cocktail and mix it with Coke. Fucking amazing taste.

Why can the japs make whiskey the best? All the taste etc, but no nasty harshness or burn…

Got myself “real” bitters (normal and orange bitters) and will make myself some simple syrup and have a ice old fashion rather than a mix- but i can actually sip drink and enjoy this just on the rock (go go LG ice ball fridge! lol)

Well, japs make their whisky more like the Scottish. There are laws in the US regarding the mash bill and having to age it in charred oak barrels that the japs don't have.

So the answer to your question is probably over regulation in the states. That would explain why I think a well done moonshine is better than any store bought whiskey I've found. It's just really hard to find a well made moonshine.

Whats funny is I remebered this meem, and it lead to the real product, that lead me to the Hibiki -

Had a sip when I bought it, but the other day as I said this + ice ball... was nice to chill...

No headache or anything after.. I am a light weight as I do not drink much... but I do like a good amrican piss beer with pizza, mojito if I am feeling "festive" and a good old fashion.

This weekend I plan on making myself old fashion w/ a homemade /slightly/ caramelized & vanilla simple syrup + 1/2 normal bitters and 1/2 orange bitters - see how that turns out.

I was going to do the triple sear steak again, but not with 100$ whiskey...lol... I will get some of the cheap stuff for that- and it does taste good if you follow the process properly- I did it a few times, then once where I kinda fudge it, and it was not as good.

Now that sounds good! Do you have the recipe for the triple sear?

I love Scotch, and the Japanese whiskeys are really close. I’ve never jumped into them due to price of the higher end. But they drink so smooth they are totally worth it.

Oh fuck I'm not sure if I've seen that before. I bet it's good at 102.8 proof. I find the closer it is to 100 proof the smoother it is to drink. Standard American whiskey is 80 proof. I noticed that jap stuff you posted about was like 86.

Eh, google it-- find one that is "tested" with your cut - that gives times etc.

But - its essentially, take your steak, and CRUST it with salt - then give it a hard sear for 2 min each side, then plop it into the whiskey for 1 min, sear 2 min, each side the same- then finish with a soak 1min - sear 2 min each side with soy (full salt) to finish- this usually produces a rare-med rare for a "normal" type cut thick steak.

It does make an oddly complex flavor profile for the crust. I did it on a gas grill - I am sure charcoal would add its normal aspects as well - but I am sure... seeing as this is seen as a japan method (hence the jap wiskey) - I am sure it was "meant" for the hibachi / flattop - I posted... I think, when I did it once in the cooking thread.

When I first did it, I convinced myself it was hype and it would taste like any normal steak...but I was surprised that it actually gave the flavors throughout as advertised.

Do they have special propane as well?

I would like to do this method with charcoal, I think that really would be the "highest" of this method as it allows drippings to steam better, high heat and the flavor of charcoal.

But I do not have a charcoal grill :(

*mumbles* guess I gotta buy a little charcoal grill now...
