Actually, telling Blizzard to remove gender would make their artists and rendering engineers line up and quit.
It's so baked into the game's code and models at this point that it'd pretty much kill the game if they were told to apply all equipment equally to both 'genders'. They had a hard enough time with allied races and making equipment stick. It'd require a third revamp.
Not to mention the social backlash from their remaining players who literally don't give a fuck about any of the 9.1.5 changes, except for 2-3% of suckers who are into some weird shit but refuse to go to FFXIV because it's 'sexist'...
...despite the true reason being that they have friends they made in WoW that they don't want to abandon. Same shit as when EQ fell out of the good graces of its community, the only people left playing are those that had existing friends that still played. GoD+ EQ was shit.

Other games are already doing it. They can get rid of gender altogether and just use "body type" as a flag for cosmetics. Same f'n thing as male and female, but now autistic faggots can play a feminine body type with feminine hair and a viking beard, all in neon colors. Just because the architecture in the back ground is 1's and 0's doesnt mean that the player has to see those separations.

I don't want to be an asshole, but Blizzard has been the very definition of a game developer that puts a lot of resources into developing things, only to abandon all that work later. Not only with each expansion, but sometimes with each content patch.
Them combing through all those references, images and quests texts to adjust them to "modern sensibilities is most likely because they are currently like a headless chicken: without clear leadership and a vision where the journey post-Shadowlands should be going. Content pipelines have broken down because of last minute course correction, expansion will probably be cut short a content patch. But everyone is running around, trying to look busy and trying to make their work "important", as to cover their ass for the next performance review.
