Dad used to clear out the sinuses of everyone in the house when he was making his green sauce. The hot peppers in it were jalapenos and habaneros, so it wasn't insanely hot, but goddamn was it tasty. As a kid I'd sneak a spoonful when he wasn't looking, then have to drink a bunch of milk or steal a chunk of cheese.

I love me some jalapenos, but habaneros just have heat with no flavor. Serrano is about as hot as I go. After that they stop tasting good.
Oh and I should add that in this particular sauce, habanero was just the only ingredient I recognized. The first ingredient was something that started with Z.

Years ago I had an Indian friend (dot, not feather), and he once gave me a tour of Indian hot sauces. Many of them were just plain delicious, and then there were the few that were just stupid hot. He told me that many Indians just like the heat, they don't chase flavour. He said that some of the sauces were hot to the point where even the Indian eaters would just pound the food with that sauce and drink gallons of water with it. I don't get that. It is just pain, doesn't taste good, and serves no purpose.

Not true! I've had a lot of Native American cuisine. Fish with berries, buffalo steaks, corn done in pretty awesome ways...and their fry bread is awesome.
