Well im born in Europe so old school american is not my old school, lol. Soft bread without crumb is like the worst thing you could do to it, unless you have no teeth or some shit, then I understand.
To me, really good bread is crusty on the outside but chewy on the inside. Just a nice, airy but chewy texture.

I think I'm just so used to having grown up in New Orleans and having good french baguettes. I don't remember what grocery store it was, but remember I'm going shopping with my mom when we were younger, and the one store had such a great in-house bakery. She would always buy two loaves, one for dinner and then normally we'd end up eating the other loaf on the way home because they would stick the fresh bread out on a warming rack, and there's nothing that smells or taste like that freshly baked stuff.

It's hard to beat good french bread and butter.

This conversation is ridiculous.

There are a number of great breads that are wildly different.

Crusty? Sure plenty. Tons of great bread, too many to name.

Chewy, with no crust at all? Yep, hi Focaccia.

Soft and airy with almost no crust or crumbs like some of you were lamenting? Oh hey there Brioche. Fucking delicious.

How about laminated breads like croissants?

IDK, I can't stand biting into those harder loaves and there's just an absolute explosion of crust going fucking everywhere and making a huge mess.

The crust on mine is solid enough without crumbling and it's nice and soft inside. Can't complain.

Speaking of which, I have a wonderful recipe for them you should maybe check it out if you're going to come in here talking about food. I pulled it out of one of my New Orleans cookbooks, you might enjoy it.

Only bread I'm really against is any generic white bread you get at the grocery store, especially when it comes to a sub. Everything else has its place.

Yeah, I really like the Euro "here's a huge crusty loaf and a giantass bread knife" thing. I don't think I knew that there were like actual dedicated bread knives until then. And then I thought the open-faced sandwiches were weird for about 1 bite, and then it was like, yeah, you don't need two slices of this.

I make those too. They are dangerous. I make 3 loaves and they dont last all but a few hours around here.
