Came home to butcher 2 birds. One of the 2 lighter birds I was going to wait on was randomly dead. Cornish cross like to die naturally by 6 months old, was like 3-4.

So kinda messy butchered it to get meat for dogs. Likely was usable, somewhat pliable, luke warm. Should have gutted it more if it was hotter maybe have used it. But squeemish about it going bad.

THough funnily enough of the 2 I butchered tonight, took so long trying to hand pluck these fuckers (come easily but pulling individual pins after plucking the bulk after a scald) , that I would have probably been in the same ballpark as the deceased bird.

One is for a coworker, ice bathed patted dry and bagged up giblets (fucking gross first time seeing I think) and the other organs from both.

Was an experiment just to say I could, but in the future I'm sticking to just full skinning and breasting/legging out. Granted I'll also not do pure meat cornish crosses again. So filthy, they grow so fast they have trouble walking and just sit in their filth.

If you're getting gas grill make sure you plumb natural gas to your patio/deck/whatever. Connect the grill to your home natural gas (easy conversion from propane, or if you're buying a new one get the gas option). You'll never have to get refills on your propane grill again, and it is glorious. I don't use the gas grill much, but sometimes it's just fast and easy to cook burgers for the family on a school/work night and I don't have time for charcoal.

I've got a Weber Summit F something. F35? I dunno. It's five burners and it's fantastic. Reliable, easy to clean, and I've had it for 8 years and no rust. I keep it covered whenever it's not in use.

Not really an option for me, but whenever we move I'll have a picture in place to be able to connect whatever grill I decide to run. We just don't have an outdoor area that's conducive to maintaining more expensive grill.

I'm honestly just looking for something maybe around the $500 range that I can plug my propane tanks in, and I can keep it for 5 years maybe more. I'm pretty hard on the gas grills I have because I use them a lot, I'm just debating on whether I buy another cheap one and abuse the hell out of it, or spend a little bit more and get something better.

I've just spent this afternoon watching videos and scouring stupid Amazon and other places because they've got a whole bunch of deals apparently, but it seems like all the new rules that are a bit higher end to have stupid features that I don't care about.

I don't need God damn dials that have LEDs, I don't need a digital thermometer, and I definitely don't need a goddamn beer holder on the side of my grill to make my beer warm. It just seems like every manufacturer adds all these Goofy bells of whistles to jack up the price. No different than a truck, I just need it to cook hot, cook consistent, and stand the test of time.

I just want a decent insulated or dual layered shell, porcelain cast iron grates, a side burner, and I wouldn't mind some sort of infrared burner or sear zone, I guess like what the Webers have. Bonus would be a big upper rack that folds out because I find cooking chicken and stuff up there tends to be pretty beneficial, especially for vegetables. I saw some stupid Chinese model that had one that folded out, and I thought that was pretty brilliant, but it doesn't seem like any of your name brand versions have something like that. Probably because it would be an upgrade.

Weber all the way. I used to buy the cheap $200 jobs and they would last a few years, uneven cooking all that BS. But my old man gave me his old silver Weber model that he had for about 10 yrs when my sister bought him a new Weber. Ive had the thing uncovered on my patio now for another 10 yrs now, even in brutal Michigan winters. I replaced the burner once, and the flavor baffles twice with cheap amazon knockoffs. I was going to replace the burner this year along with the baffles I replaced, but I took it all apart and the stainless burners were still pristine like new, lol. So I saved the new burner for another year. I mean, 20 fucking years old and the thing grills my meats like a trooper.

As for the gas vs propane, of course the gas would be sweet to have if you can pull a line yourself. But it would prob cost something like a grand to run a gas line to your grill up to code. and thats like 50 tanks of propane. I use about 2-3 per year so thats like 15+ yrs to have the gas pay off.

Yeah, I'm just trying to get myself to bite the bullet on a Weber. Only other brand I've been eyeing is a Napoleon. Just trying to figure it out if I want to spend a little bit more and maybe grab one of those, but it's got more of a stupid bells and whistles even though their models are supposed to be really good, but like you said, Webers just last.

Was using up stuff in the fridge and freezer yesterday. Had a big package of beef smoked sausage from HEB that we got on sale, and some pork belly pieces. Ended up making a big pot of red beans and rice, but did a bag of pintos too. I don't know how much it ended up being quantity wise, we've given out several jars to the neighbors. I haven't made it from scratch in a long time, but apparently that turned out excellent. I simmered the pieces of the pork belly with the beans for a bit, fish them out, and then tossed him into the air fryer they get them super crispy. Didn't have any tasso on hand but the belly worked

It's simple but nice to have something so easy at times for a big one pot meal. Probably going to be even better this evening after sitting in the fridge all night.

Arrived in a week despite warning on delivery lead time. The only unexpected hurdle was that I needed a 1/2 inverted female flare to 3/8 NPT gas fitting to attach the quick connect, which are weirdly hard to source. Had to hit three different plumbing supply stores.

Now we're cooking with gas, just need a big skillet for smash burgers.

Yeah it's basically like Japanese Salisbury steak.

We do a lot of hamburger steak or salisbury steak and gravy with mushrooms, onions, and rice or mashed potatoes if we get a big pack of ground beef on sale.

Throw in a green vegetable steamed, and you're good to go. Just nice and easy, and something my mom always used to make when we were growing up.

I think I have everything for this recipe and I'll probably give it a go. About a fried egg on top of it would be pretty good. Just nice to change up the flavor profile sometimes.
