Got to clear out the freezer because we're moving, so found a rib roast that had been in there for maybe a year and a half two years, and a pheasant that was probably bought around the same time. I don't know why the hell it didn't cook them earlier.

Did a wet brine on the pheasant for 2 days and a dry brine on the rib roast for a couple of days and tossed them on the Weber kettle and did a smoke this evening at about 275 300. I was kind of worried that the pheasant was going to be super dry because I didn't bard it or stick butter under the skin and the normal stuff that I do, but the 48-hour wet brine really did the job.

Was going to make a potato gratin cuz I got potatoes and onions and stuff to use up, went to go make a bechamel, and completely screwed it up and made cookie dough or something. I'll figure tomorrow morning home and get back in there and do it right. I just completely flipped it though because I haven't made one in a while, and I think I had my milk too hot.

Once I get the potatoes made though I can bring stuff over the neighbors which I know my buddy next door will appreciate it since he hasn't been able to grill lately battling cancer.

Well son of a bitch, it's raining again today because of that tropical storm. Just got done going to HEB because it was the last holiday weekend I'll have at this place, I figured I would grill.

I was going to do palomilla, big pot of black beans, cilantro rice, grill some onions squash and zucchini, got a bag of shrimp, and even some pork chops. Stickers pick up a piece tomorrow after I spend this evening marinating and prepping, I'm going to be able to share it with my neighbors and stuff tomorrow.

Was going to try to cook today but that gives me time to do proper misen place.

Anybody else going to cook something good this weekend?

No rain all week here and I'm like, 4 miles from you. The forecast can never be trusted.

Seriously? You've not gotten any rain. It's been consistent in the afternoon and into the evening all week. I'm Panther Creek area.

That's crazy if true.
Sprinkles that don’t even really help the grass. It’s super frustrating. I keep watching the radar and the systems move around our village and reappear in Grogan’s or Panther or Indian. It sucks, lol. We need the rain.
