I think he means the episodes that advance the broader narrative instead of the adventure of the week episodes. Sorta like how the X Files had it's monster episodes and then it's meta narrative conspiracy advancing episodes.

Season 8 was better than 7 so let's hope the trend keeps going.

Everyhitng is cannon but if you just want main "lore" episodes from last 3 seasons. I also added episodes that change the family dynamic or relationships here as the Citadel of Ricks / Rick Prime / Evil Morty etc is winding down, and how the family is getting along and Ricks growth as a person is the new lore.

That should be the main lore episodes and main thrust of Jerry and Ricks relationship, which sounds like who cares, but it matters

I think the technical distinction is episodic (adventure/monster of the week) versus serialized storytelling. Like the old adventure "serials" were the story continued week to week instead of being self contained.

They were also called chapter plays.
