Beta being capped at 20 is good and bad. Good in that you have a definite goal and can roll some alts, bad in that it gives people an unhealthy idea of how much content/progress there should be by level 20. Right now you're spending a few days grinding out blues/gearing up, but in release it'll be just another couple hours on the way to 60.
Some classes also do not really come online until much later, so there are complaints and doom and gloom but we have no way to actually test anything so ¯\_(ツ)_/¯

If there isn't a strong counterforce on the Horde side, they will just dominate the server and make it unplayable.
When Grobbulus (Classic) had Mayorwest & Big PPvP come in on the Alliance side, it destabilized everything because he was able to amass huge forces to shut everything down (cities, raid entrances, etc). Took a while for a counterguild to form.
They would also send in a lot of members everytime a guildie got ganked, so if you were a rogue or druid, you could have a lot of fun wasting their time.

It might be too soon to tell, but warrior is looking fun.
I've been dps and heals for years, but my mmo roots are in tanking. I miss it.
I always go with a hybrid class as my main for the role diveristy, so warrior is looking pretty enticing this time around.

Man, warrior has been a breeze so far and we don't even have Victory Rush yet or the other staples. Out of combat regen is decent and the Blacksmithing set + weapons you can make at level 10 are super powerful.
I'd like to do DPS warrior, Rogue, or Shaman. Guess it will depend on the guild I join and what classes/roles are needed. Prefer not to run Mage or Druid again.

Druids are the multitool you are looking for then. Bur form with a decent weapon is pretty much all you need to do everything. The fact that you have the other 3 forms too just means you can be whatever you want to be.

Quest tracking not available in every zone? It was new and available this morning on Undead toon, but with Orc in Duratar there is no Questie type internal addon. Weird.

I couldn't find what the specific addon is called on my CurseForge thing but apparently there's one to block entire guilds or "guild families" when there's several guilds with the same name and a number. Might be useful for you if it bothers you.
