Going some version of the LFR/Normal/Heroic/Mythic difficulty slider I don't think would be anywhere near as popular as a blanket Vanilla+ hardmode.

EverQuest eventually introduced substantial +difficulty buffs to bosses to compensate for similar issues. When a new wave of Vanilla servers comes out some time a year or years from now I wouldn't be surprised at all if it had some variety of hard-mode raid difficulty modifier.
