Craft? Well, you can buy all types of ammo and most resources from the Trapper npc you'll see at various locations (mostly survivor camps). Make sure to upgrade your Bows so you'll get higher ammo capacity. Most Mongol camps, forts, etc. have "ammo" holders around.

I only have the Fox Den one atm, but most of the den's I've found have been from simply hearing the fox in the distance, or seeing it. Birds will guide you to points of interest, and quest givers. If one took you to a place with a "view", it might have been a Haiku spot? I had one lead me through the Komatsu(?) Forge town while I was there before a quest took me there (so it was empty). It kept leading me to a certain house...

Been playing the past 2-3hrs now, haven't progressed the Story much due to getting pleasantly sidetracked. It has been a lot of fun so far just roaming around, fighting random bandits / mongols, finding places / shrines / petting foxes.

Never read Elantris, so can't comment on that specific book. I've read the first Mistborn trilogy and thought it was good, good enough for me to start reading Stormlight, which has been a very enjoyable experience overall, even with the most recent book being disappointing.
