Yeah, trim them to death, and then I cut them to 2-3 rib pieces. Easier to handle when you finish them as they are so tender that a lot of handling will just cause them to fall apart.

That sucks. It's gorgeous here. About 65, and it's supposed to be about 80 and clear tomorrow. We've been dropping into the 50s at night and haven't run our air conditioner in ages. Not trying to rub it in, just really enjoying it.

I have ribs in the sous vide. They'll be in about 25 hours when I get them out. I put a rub on them before going in, then made a rub related sauce I'll put on before finishing them on the bbq. Will report back.

Yeah, I played it and was a pitcher, and I can tell you it happens more often than you'd like that you throw that ball at the plate and a split second later it's flying back at your head...It's a really short distance. Super fun to play, though. Small in-field, fast pitches, softer balls.
