I cook a lot more fish in the summer months, when I can do it slowly, over indirect heat on the grill. I tend to spice an marinate it well, and not worry about sauces. I also prefer to serve it with rice or orzo. Add some sugar snap peas, and some fresh fruit on the side, and I've got a chubby.
