I never played Arknights. I had heard of it, and the couple of streams I watched of it was just someone playing a tower defense type game... which I had no interest in playing.

Here is a reddit thread that has the control keybinds for Controller / KB+M. If I can use QWSE instead of WASD, and if I can use 1 2 3 for other stuff, and then swap R for F, I think I'll be good to go.

Difficulty will be fine since you can gear up to smash stuff. The real difficulty will be adjusting to the control scheme and finding a way to fight that you feel comfortable with. I am 99% sure there is enough to find in the the starter area that will allow you smoke every boss.

There best port to PC has been Stellar Blade, the exact opposite of their 1st party games, so in order protect those DEI infested studios, they will no longer port their games to PC (can't have them look worse compared to Stellar Blade).

What do you mean by "static npc's"? In the Luke video, every single npc was doing its own thing and would react to you (if needed).

I did, and I mentioned that in my other post. As I said, I was impressed with how well the game seems to run on last gen hardware, and also why I am hopeful that once I am playing it on my system and this monitor the issues I have with how the game looks will become irrelevant.

The game should be fine. A slightly better version of BDO without the p2w aspect and a "complete" game. Will it compare well to other massive single player games like RDR2 / Witcher 3 etc.? Probably not, especially in terms of Story. I think it'll be much more similar to a standard Ubisoft game...

Note, unless I misunderstand how Block works for On-field / Off-field, you can use some other character (like Pog in that vid) as your main operator, but you'll need to be locked on to a target; when you use Catcher to Block, he will move infront of your controlled character.
