It is the whole "food is art!" bullshit concept. You can actually have food as an art, and still serve portions that will actually feed a human being, not a Troll Doll from 1996. People -want- to be satisfied. The people who jerk themselves off to 1/8th portions like those expressed earlier are not fans of food. They are fans of the fame that comes with being a food critic. And as someone who has made food for the .01% on more than a few occasions, they also don't appreciate having their entrees as 5% serving size. The only people who do are assholes.
