Possums? When did this become the Southern White Trash Cooking Thread?
You haven't lived until you've had Possum Lasagna(Possagna) with a dollop of cottage cheese.

Was it cage free, grass fed, no antibiotics certified organic possum? Sounds like you need to try again.

Possums are fine, they eat ticks, that makes me like them. But damn they are creepy looking. Jibblies.

I've eaten squirrel, don't think I'd eat possum. I dunno, maybe it's just meat, but why? I don't need to.

Not really sure why people live there to be honest

The weather, overabundance of social activity, convenience to middle of nowhere redwood forests in a 35 min drive, the food and drink scene, amazing day trips that are an all out vacation expense for other people (Tahoe, Yosemite, Sequoia, Napa), by far the best pay rate for what I and most people on this forum do by trade. It's fucking awesome.

Speaking of Gochujang I make buldak every once in a while so I have a big jar of the stuff and was looking for other things to do with it when I came across this:

Think I may try that this weekend.

Lotta turds on the sidewalk? That's what I've heard. I get it, I just think cost of living is pretty prohibitive.

I finally used my air fryer to make fried chicken. Well, a fried chicken breast because I didn't feel like buying an entire chicken and cutting it up. Surprised how well it turned out. Really damn good actually. I also like how since it's not completely submerged in oil, you get some parts of the breading that get slightly charred. Will definitely make again.

use the cheat i learned from food wishes and coat it with baking powder, i'd say 10wings uses 2tsp of it gives it a nice fry crunch.

Damn that looks really good.

I'll have to try making buldak this week. I've never heard of it before now and it looks great. I bet it'll be a good way to learn the hot and cold spots of my new hand-me-down grill.

Anyone use a temperature controller for charcoal smokers? I have a Chargrill Akorn and although I do not have any problems maintaining cook temperatures. I thought about just getting a pellet/electric smoker but decided against it since I dont see a point of a second grill.

I have my eyes currently set on

WIFI BBQ Controller for Weber Smokey Mountain/Akorn [SYL-2615SYS-W] - $247.00 : Auber Instruments, Inc., Temperature control solutions for home and industry

I have also looked at the CyberQ and Pitboss 400 but think I have settled on the Auberin, thoughts?

I have a "stoker" which worked reasonably well with my big green egg but they're not made anymore.

I believe the Fireboard FBX11 now has a fan controller. It seems like a pretty nice thermometer as well as the blower controller.

Alrighty, I believe I am ready to add to my kitchen gadgets. I'm looking to add an air fryer, still not 100% on this so tell me why I shouldn't do it. The one I am looking at, if I go ahead with it, is:

It also has a dual layer version but I'm not sure if that is a good option.
