I feel like in my bracket people don't know how to deal with them. They think extra hard before killing either of them.

The problem with that is that you're basically falling into the same trap as playing bot games in League/DOTA. If you accustom yourself to playing against inferior players, you'll become one yourself.

Well it's definitely a mistake to not be running double belcher.

Here's my undertaker priest list. I haven't playtested it a lot on ladder but it works reasonably well.

EDIT: Actually Im dumb. You would lose cause barrier could never be triggered. My bad!

30 soulfires would do 112 dmg (discard 2 cards of your initial hand)
30 ice barrier is 240 armor

so yea. warlock would fatigue out first
