Never needed 64 for gaming. Only added when I started doing astro-image stacking as the software takes 100% of your PC's resources when it stacks.

Strictly gaming, no.

But in the modern age there are 3-4 apps running, tabs open, and streaming video playing.

32 gigs on Windows 10? Maybe.

32 gigs on 11?

That's more money out of pocket.

Thankfully I bought my 64gb last year before the prices went up.

A virtual machine can easily use 8gb. A particularly girthy Minecraft modpack can recommend 10-12gb. My too many tabs open can easily eat up a few more. That's not counting W11 itself and any other applications I might want to use. Sure, I don't need Minecraft running while I'm being productive, but why shouldn't I be able to?

I don't want to have to shut everything down just to free up memory for other things, and at the time it was under $200 for the other 32gb, so total no-brainer I'd say. Now, if it were another thousand instead, I'd make do I suppose.
