Is it both of the original films where the framing device is a reporter talking to an old man claiming to be Billy the Kid? I can't remember if that's just the second one. What you could do is have old Estevez play that character while telling a story about a (fictional) adventure no one knows Billy went on after everyone thought he was dead.

Then we steal the ending to Butch Cassidy and the Sundance Kid and freeze frame as geezer Billy charges the army of Bolivia.

It's the second one where he discusses his life and attempts to provide proof to a lawyer for the state of New Mexico not a reporter. He tells the lawyer his story providing gun shot scars as evidence in an attempt to be pardoned by the Governor of New Mexico.

The "Old man Billy" scenes in Young Guns 2 are depicting the real life Ollie Roberts who claimed to be the real Billy the Kid and seeked out a pardon with the governor of New Mexico. Who also had the scars in the places Billy the Kid was supposedly shot but his story contradicted Pat Garretts report of the death of Billy the Kid and he was ultimately dismissed as a fraud.
