People are talking about Diaz or Cerrone as replacements but I don't see why Conor would even go through with the fight now other than to keep his word. He always says he'll be there regardless of the opponent, and he'll still make a shit load of money, but he doesn't have much else to gain.

Probably this. I hear through "friends of friends" in the BJJ community that at the major Brazilian gyms they pretty much just beat the shit out of each other all the time. It's stupid.
