I used to go to a local cheese steak chain in California and they had pictures of all these Philly restaurants on the wall so I wrote a couple of them down and visited when I was in Philly. I had about 4 cheese steaks at different places while I was there and none of them were as good as the place in California IMO.

I read up a lot and avoided the so-called tourist traps. Still wasn't impressed.

Tourists traps can very rarely be worth it. If I want a cheesesteak I'm just gonna go to Charley's. Its solid and a large feeds me for a day. I'm not a sandwich person, so that doesn't happen very often. 99% I want a sandwich, its a pile of leftover meat from some other meal with some vegetables I'll put in a container, then I'll stop at the mexican bakery on the way to work and buy a 50 cent bolillo to slap it in. Throw it in the toaster at work and perfection.

this looks better than all the garbage cheesesteaks i had in phily or pa, and they actually put meat on there. honestly a cheesesteak is really simple, carmalize onions/shrooms grill a sliced ribeye and put on some provalone (i myself hate wiz), the important part is the hoagie, you get the bread wrong, youre fucked, this dude bakes his own in house

Jersey Mike's used to be decent, I went recently and they have definitely cut down how much steak you get by about 30% since the last time I visited. A real shame as it's not worth the cost now.

Yeah, they have already started down the the Subway path. First it was smaller portions. Next, it will be replacement of ingredients with processed shit. Finally, it will be the steady, incremental increase in prices.
