The Force alerts Vader to anything he does or tries, even before T1000 does it.
T1000 shoots out a blade to impale him....Vader sees it coming, simply force stops the speak as it begins to protrude.
Literally every scenario you come up with, the Force alerts Vader of it. There's nothing it can do other than be destroyed.

Even so, vader is likely not able to destroy T1000, and he will tire eventually. He is a very weak man inside that suit.
I doubt the lightsaber can kill the robot. Best it can do is destroy a little bit at a time if the terminator stays still long enough. It's a longshot that vader will even figure out how to kill that thing, much less be able to pull it off.

If you use David's plot armor as an argument, it should also be noted that Vader, for all his force induced prescience, has an alarming tendency to have his schemes fail miserably.
Every person he went toe to toe with he beat. Even the emperor he beat, and only then died. When Vader goes one on one with anyone they get beat.
All Vader has to do is force levitate him into a pool of liquid metal and stick his light saber in it until he is melted. His strength or dexterity doesn't have anything to do with it. Dude is a super powerful and mature force user. He doesn't need to dance all over the place. Vader is stronger in the force than he was when he was Anakin.

Also, the 10 year old kid was running from T1000. Vader is full of hubris, so he will face off with him. All the Terminator movie proves is that the T1000 isn't very good at chasing prey.
