Tocino is pretty awesome; but you would be surprised how different it tastes depending on the region. Sometimes its crunchy and sweet, other times its soft and tangy. Its similar to Longanisa (a type of sausage) in that regard . Regional differences and preferences impact what ingredients go into it.Oh that's what that marinated pork was! TOSINO!
There was a fusion filipino place in brooklyn that was kinda meh but they had Tosino tacos that were fucking awesome. For the longest time I kept asking around what it was called... I thought it was like al-pastor but it's really something different. It's not really chinese barbecue pork either, it's pretty unique.

I haven't been to the Philippines in like 30 years. I still have nightmares about Manila traffic.
