The Sphere is the shit. Even the movie they play there is worth seeing.
Seconded , The Sphere is unlike anything you will see anywhere. The movie 'Post Card from Earth' is awesome!

Fremont street experience at night
Hoover Dam (if you are into infrastructure)
Red Rock Canyon - even the drive through part is nice with lots of hiking / biking areas

Only restaurants I went to on the strip were at the Tropicana and it's shut down (may be torn down now been a min since I've been to the strip). Hell I usually go to Chili's off the strip.

I know I'm late but Hash House is always a classic breakfast stop. Absurd over the top breakfast. Wolfgang Puck's restaurant in the MGM is good too.

Other than that I like all the nicer places. Joe's Stone Crab, Le Cirque. Vegas fine dining is great.

We went to the Sphere, saw Postcard from Earth and it was nice, even though I felt like the potential of the screen was not 100% used.
Fremont street was also very nice, much more chill than the Strip.

You know what I didn't think I'd care for but ended up really liking? The Hoover Dam.

Maybe I've just watched too many engineering YouTube videos, but the dumb thing is just amazing.

When we went to Vegas in '12 my favorite things were the hoover dam, Red Rock Canyon, Fremont Street Experience at night, and the Olympian show in the mall at Cesar's Palace (near Cheese Cake Factory - not sure what the actual show was called but it was free and it was in the common area of the mall). I didn't give 2 shits about the rest of the place. BUT - I don't gamble / drink / smoke AND my back went out so bad while we were there I could not leave my room for 2 days. Weird that we wound up moving to this area later in life but life is a funny business.

Now that I'm a 'local' (live in Nevada) my favorite places are The hoover dam, Death Valley Park, Red Rock Canyon, Valley of Fire, & Ash Meadows nature preserve. I also disagree about not bringing your girl, it depends on the girl. My wife and MIL both loved the Dam park and the exhibit center.

Also, and I am not joking here, EVERYONE needs to experience the Sphere. It's like IMAX on steroids. I'm actually looking forward to the remake of the Wizard of Oz that's supposed to start this month. That's assuming they didn't totally fuck it up.
